Snow In Texas!!!

I know what y’all are thinking…. Ya right! I thought I was never ever going to see snow again, remember I am the City Chick that gave away all of my “snow clothes” & “winter clothes” anything that you would need to wear in weather above say 70 degrees… Because well I must of thought Texas was part of the tropics…

NOT!!!

Well Some would say my kids live a “charmed” life.  (They may not really know our life story) But if you look at it from the perspective of everything else besides Minnie being sick… They do! A lot of the “charmed” parts have come in spited of the fact that she has been ill for so long.  The Lord has used so many people, organizations, & random acts of blessings just because we are “blessed”.  I know that sometimes looking in from the outside gets foggy but from the way we see things, the Lord has clearly planned some blessings to cushion ache.

One of those “charmed Blessings” came last weekend when our Neighborhood blew in snow, so the kids could go Sledding!  Ty and Minnie had a blast, just in time to there little hearts have been missing home and the snow was just the right thing!!!  I hope you love the slide show….

I also had a “charmed blessing.” My friend Stephanie sent me “Fall.” She took 4 leafs from her back yard in Medford and mailed them to me…. I have been so homesick it was just what I needed too… Thanks friend.

I so wish I could take credit for this recipe but I can’t…  But what I can I say is THANK YOU Steph! She started making these cookies for me years ago and even though I am in Texas I still have received them in the mail.  I made this batch this morning, no joke it takes like 3 minutes to whip them up, 8 min to cook them and y’all know I can not have flour, but no problem! all you need is:

1 cup peanut butter
1 cup brown or white sugar
(trust me I have used both they come out great no
matter what kind of sugar you use)
1 egg

heat your oven to 350 cook them for 8 min.  you really need to let them cool for about two minutes on the cookie sheet before you move them ( again trust me, I have tried to move them right away and it does not work to not be patient with them they want to rest…)

I get about 18 to 20 if I use a table spoon to scoop and drop.

Steph adds tons of goodies to hers, sometimes I do. Mostly I make them plain
some suggestions are:

instead of creamy peanut butter use crunchy
chocolate chips
nuts
left over Halloween candy taken from your kids to add to your yummy cookies!


Going on a Saturday drive

I had a plan when we woke up on Saturday morning, we were going to take the kids to the pumpkin patch.  Well you might want to take a note… pumpkins are out of season in Texas so even if you find a farm that has a ” pumpkin patch” it is a fake.  It is not a good old north west muddy romp around till you find the best one. nope they are all good cuz Uncle Jason sent a truck down here from Seattle full of them!  But they had fun.. Rode horses went through a maze had home made ice cream. (Aunt Deenie, you were remembered and talked about, and the kids are requesting a repeat on the ice cream making.) After the excitement of the fake pumpkin patch we went on down the road. We were headed towards Johnson City and we came across a animal zoo of sorts….

We saw many different animals, Minnie’s favorite was the zebra, Ty’s was the Yak.
I think Josh and I both liked the Camel! How funny that she is posing and my family has the same expression… Weird, Just shows that God does have a sense of humor, because I can not be in a family photo he sent a camel to fill in for me…. At least He made her a happy Camel!!!

As you can see Minnie is feeling great, we went to Church today, I am Glad. He seems to know times that you need your cup filled… I am praying for a miracle, I know that there are millions of people that have houses for sell. I am reminded of that every time I mention to some one that “I just wish that the Lord would sell my house”. Logically I can look at things and compartmentalize and for the most part I have been doing really well.  These days I feel a like doing that is getting harder.  I  know that the Lord wants for Josh and I to see Him move in a mighty way. The problem is, His mighty way may not always be exactly what we are looking for.
I guess the miracle could even be me shutting my mouth and opening my eyes long enough to see Him….
